Jalapeño Marinade

Due to the intense flavour, only a short marinating time is necessary. This is perfect for a quick but elegant after work dinner.

 

Ingredients:

 

  • 1/2 cup jalapeño jelly
  • 1/3 cup onion, finely chopped
  • 2 tablespoons line zest, grated
  • 2 cloves garlic, minced
  • 1/2 cup lime juice
  • 1/4 cup olive oil
  • 1/2 teaspoon ground cumin
  • dash salt and pepper

 

Steps:

  • Dissolve the jalapeño jelly in a small sauce pan. Remove from heat. Combine the jelly, grated lime zest, lime juice, garlic, onion, and cumin in a blemder or in the bowl of a food processor. With the motor running, drizzle in olive oil.
  • Marinate chicken or pork for 1 hour before grilling.
