Provencal Marinade

This is an old stand-by in our home for chicken or pork. Vary the flavours with different herbs...rosemary alone is wonderful.

 

Ingredients:

  • 1/4 cup dijon mustard
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon herbes de provence*
  • salt and pepper to taste

 

Steps:

  • a blend of thyme, rosemary, lavender, and summer savory available in specialty food shops and some supermarkets.
  • Combine all of the ingredients in a glass dish suitable for marinating.
