Lemon Chicken

This tangy, low fat marinade is also excellent for fish or pork.

 

 

Ingredients:

  • 4 chicken breast halves, skinned and boned
  • juice of one lemon
  • 2 teaspoons olive oil
  • 1 clove garlic
  • 1/2 teaspoon dried oregano
  • pinch cayenne

 

Steps:

  • Combine all the ingredients in a glass dish or heavy-duty Ziplock® bag. Marinate at room temperature for 20 minutes, or in the refrigerator for up to 6 hours.
  • Preheat barbecue on HIGH. Place chicken on the grill, reduce heat to MEDIUM, and cook for 12 minutes, turning once halfway through cooking.
